- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups diced potatoes (Yukon Gold or Russet)
- 4 cups chicken or vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon salt (more to taste)
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- Green onions or chives, for garnish
Instructions
- In a large pot, heat butter and olive oil over medium heat.
- Add diced onion and cook until softened, about 5 minutes. Stir in garlic and cook 1 minute more.
- Add potatoes, broth, thyme, parsley, rosemary, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 15–20 minutes or until potatoes are fork-tender.
- Use a potato masher or immersion blender to blend part of the soup for a thicker texture, leaving some chunks.
- Stir in heavy cream and shredded cheddar until melted and smooth.
- Taste and adjust seasoning as needed.
- Serve warm and top with extra cheddar, chives, or cracked black pepper.
Notes
For extra richness, swap heavy cream with half-and-half or add a splash of sour cream. Want it even cheesier? Mix in smoked cheddar or white cheddar. This soup thickens as it cools—add a splash of broth when reheating.
