Description

Ingredients

  • 3 ears fresh corn, husked
  • 1 tablespoon olive oil (for grilling)
  • 1½ cups cherry tomatoes, halved
  • ¼ cup chopped red onion
  • ¼ cup chopped fresh basil (or parsley)
  • For the dressing:
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar (or lime juice)
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Grill Corn: Brush corn with olive oil and grill over medium-high heat, turning occasionally, until charred in spots (8–10 minutes). Let cool slightly, then cut kernels off the cob.
  2. Make Dressing: In a small bowl or jar, whisk together olive oil, vinegar, mustard, salt, and pepper.
  3. Toss Salad: In a large bowl, combine corn kernels, cherry tomatoes, red onion, and fresh basil.
  4. Dress & Serve: Pour dressing over the salad and toss gently. Serve immediately or chill for 15–30 minutes to let the flavors meld.

Notes

No grill? Char corn in a hot skillet. Add feta or avocado for extra richness. Great made ahead and served cold or room temp.
