Charred Corn & Cherry Tomato Salad is a simple yet flavor-packed dish made with sweet corn, juicy tomatoes, fresh herbs, and a tangy vinaigrette. It’s smoky, sweet, and perfect for summer picnics, BBQs, or as a vibrant side dish.
Ingredients

- 3 ears fresh corn, husked
- 1 tablespoon olive oil (for grilling)
- 1½ cups cherry tomatoes, halved
- ¼ cup chopped red onion
- ¼ cup chopped fresh basil (or parsley)
- For the dressing:
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar (or lime juice)
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
Instructions
- Grill Corn: Brush corn with olive oil and grill over medium-high heat, turning occasionally, until charred in spots (8–10 minutes). Let cool slightly, then cut kernels off the cob.
- Make Dressing: In a small bowl or jar, whisk together olive oil, vinegar, mustard, salt, and pepper.
- Toss Salad: In a large bowl, combine corn kernels, cherry tomatoes, red onion, and fresh basil.
- Dress & Serve: Pour dressing over the salad and toss gently. Serve immediately or chill for 15–30 minutes to let the flavors meld.
Notes
No grill? Char corn in a hot skillet. Add feta or avocado for extra richness. Great made ahead and served cold or room temp.
