Description

This simple Cauliflower Soup is creamy, comforting, and full of flavor. Made with fresh cauliflower, herbs, and a silky smooth base, it’s a cozy dish perfect for any season.


Ingredients

  • 1 large head of cauliflower, cut into florets
  • 2 tbsp olive oil or butter
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk or cream (optional for creaminess)
  • 1/2 tsp nutmeg
  • Salt and pepper, to taste
  • Fresh parsley or chives, for garnish

Instructions

  1. Heat olive oil or butter in a large pot. Sauté onion and garlic until fragrant.
  2. Add cauliflower florets and broth. Bring to a boil, then simmer for 20 minutes until tender.
  3. Blend the soup with an immersion blender until smooth.
  4. Stir in milk or cream if desired, and season with nutmeg, salt, and pepper.
  5. Serve hot, garnished with fresh parsley or chives.

Notes

For extra richness, sprinkle in shredded cheese before serving. For a lighter soup, leave out the cream and blend with extra broth.
