This simple Cauliflower Soup is creamy, comforting, and full of flavor. Made with fresh cauliflower, herbs, and a silky smooth base, it’s a cozy dish perfect for any season.
Ingredients

- 1 large head of cauliflower, cut into florets
- 2 tbsp olive oil or butter
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable or chicken broth
- 1 cup milk or cream (optional for creaminess)
- 1/2 tsp nutmeg
- Salt and pepper, to taste
- Fresh parsley or chives, for garnish
Instructions
- Heat olive oil or butter in a large pot. Sauté onion and garlic until fragrant.
- Add cauliflower florets and broth. Bring to a boil, then simmer for 20 minutes until tender.
- Blend the soup with an immersion blender until smooth.
- Stir in milk or cream if desired, and season with nutmeg, salt, and pepper.
- Serve hot, garnished with fresh parsley or chives.
Notes
For extra richness, sprinkle in shredded cheese before serving. For a lighter soup, leave out the cream and blend with extra broth.
