Description
Cattle Drive Casserole is a hearty, comforting, Tex-Mex–inspired bake loaded with seasoned ground beef, creamy layers, melty cheese, and buttery biscuit topping. It’s easy, filling, and perfect for busy nights or feeding a crowd!

- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 small onion, chopped
- 1 cup sour cream
- 1 cup mayonnaise
- 2 cups shredded cheddar cheese, divided
- 1 can (4 oz) diced green chiles
- 1 can refrigerated crescent rolls
- 1 can (10.5 oz) cream of chicken soup
- Salt & pepper, to taste
- Green onions or sliced jalapeños (optional for topping)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13 baking dish.
- In a skillet, cook ground beef and onion until browned. Drain any excess grease.
- Add taco seasoning and water. Simmer for 3–4 minutes until thickened.
- Unroll crescent dough into the baking dish, pressing seams together to form a crust.
- Bake crust for 5–7 minutes until lightly set.
- In a bowl, mix sour cream, mayonnaise, cream of chicken soup, 1 cup cheddar cheese, and green chiles.
- Spread the cooked beef mixture over the baked crescent crust.
- Spoon the creamy mixture over the beef layer, spreading evenly.
- Top with the remaining 1 cup cheddar cheese.
- Bake for 25–30 minutes until bubbly and golden.
- Let cool slightly before slicing. Top with green onions or jalapeños if desired.
Notes
For added heat, use hot green chiles or pepper jack cheese. This casserole reheats beautifully and can be prepped a day in advance. Serve with a side salad, Mexican rice, or chips and salsa.
