- 2 cups cooked pasta (penne, rotini, or elbow)
- 1 cup frozen mixed vegetables (peas, carrots, corn)

- Stir in diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Simmer 5 minutes.
- Add cooked pasta and frozen vegetables. Mix until well combined.
- Transfer mixture to the prepared baking dish and top with shredded cheddar cheese.
- Bake 20–25 minutes, until cheese is melted and bubbly.
- Optional: Garnish with fresh parsley before serving.
Notes
You can substitute ground turkey or chicken for a leaner version. Add extra vegetables like bell peppers or mushrooms for more flavor.
