- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) baked beans
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1/2 cup barbecue sauce
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1 box cornbread mix (plus ingredients listed on box)

- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook ground beef, onion, and garlic until beef is browned. Drain excess fat.
- Stir in baked beans, corn, diced tomatoes, barbecue sauce, chili powder, paprika, salt, and pepper.
- Pour beef mixture into prepared baking dish and sprinkle with shredded cheese.
- Prepare cornbread batter according to package directions and spread evenly over the top.
- Bake for 30–35 minutes until cornbread is golden and cooked through.
- Let rest 5 minutes before slicing and serving.
Notes
For extra heat, add jalapeños or hot sauce. You can substitute ground turkey or sausage for the beef if desired.
