  • 2 tbsp olive oil or butter
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 lb (450g) carrots, peeled and chopped
  • 3 cups vegetable or chicken broth
  • 1/2 tsp ground ginger (optional)
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper
  • 1/4 cup heavy cream or coconut milk (optional)
  • Fresh parsley or chives, for garnish

  1. Sauté aromatics: Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook 1 more minute.
  2. Add carrots: Stir in chopped carrots and cook 2–3 minutes.
  3. Add broth and seasonings: Pour in broth, add ginger (if using), salt, and pepper. Bring to a boil, then reduce heat and simmer 15–20 minutes until carrots are tender.
  4. Blend soup: Use an immersion blender to purée the soup until smooth. Alternatively, transfer in batches to a blender.
  5. Add cream: Stir in heavy cream or coconut milk, if desired. Adjust seasoning as needed.
  6. Serve: Ladle into bowls and garnish with fresh parsley or chives.

Notes

For extra depth, roast the carrots before adding them to the soup. This soup can be stored in the refrigerator for up to 3 days or frozen for longer storage.
