- 1 sheet puff pastry, thawed
- 3 large yellow onions, thinly sliced
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon sugar (optional, helps caramelize)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cloves garlic, minced
- 1/3 cup crème fraîche, sour cream, or ricotta
- 1/2 cup shredded Gruyère or Swiss cheese
- Fresh thyme, for garnish
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large skillet, heat butter and olive oil over medium heat.
- Add sliced onions, salt, pepper, and sugar (if using). Cook for 25–30 minutes, stirring often, until deep golden and caramelized.
- Add garlic and cook 1–2 more minutes, then remove from heat.
- Lay puff pastry on the baking sheet and lightly score a 1-inch border around the edges.
- Spread crème fraîche (or ricotta) inside the border, then top with caramelized onions.
- Sprinkle shredded Gruyère over the top.
- Bake for 20–25 minutes, or until pastry is puffed and golden.
- Top with fresh thyme and slice into squares before serving.
Notes
For even deeper flavor, cook onions low and slow for up to 40 minutes. Add a splash of balsamic vinegar for sweetness. Swap Gruyère for goat cheese, Parmesan, or brie. Tart is delicious warm or at room temperature and makes an excellent appetizer for entertaining.
