  • For the Tart:
  • 1 sheet puff pastry, thawed
  • 3 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar (optional, helps caramelize)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1/3 cup crème fraîche, sour cream, or ricotta
  • 1/2 cup shredded Gruyère or Swiss cheese
  • Fresh thyme, for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large skillet, heat butter and olive oil over medium heat.
  3. Add sliced onions, salt, pepper, and sugar (if using). Cook for 25–30 minutes, stirring often, until deep golden and caramelized.
  4. Add garlic and cook 1–2 more minutes, then remove from heat.
  5. Lay puff pastry on the baking sheet and lightly score a 1-inch border around the edges.
  6. Spread crème fraîche (or ricotta) inside the border, then top with caramelized onions.
  7. Sprinkle shredded Gruyère over the top.
  8. Bake for 20–25 minutes, or until pastry is puffed and golden.
  9. Top with fresh thyme and slice into squares before serving.

Notes

For even deeper flavor, cook onions low and slow for up to 40 minutes. Add a splash of balsamic vinegar for sweetness. Swap Gruyère for goat cheese, Parmesan, or brie. Tart is delicious warm or at room temperature and makes an excellent appetizer for entertaining.
