They’re the perfect fall dessert for holidays, potlucks, or any time you’re craving something sweet and cozy.

Ingredients

Scale

For the crust:

    • 2 cups graham cracker crumbs
    • 1/2 cup unsalted butter, melted
    • 1/4 cup granulated sugar

For the cheesecake layer:

    • 16 oz cream cheese, softened
    • 1/2 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract

For the apple layer:

    • 2 large apples, peeled and diced
    • 2 tablespoons brown sugar
    • 1 teaspoon cinnamon
    • 1/4 teaspoon nutmeg

For the streusel topping:

    • 1 cup all-purpose flour
    • 1/2 cup brown sugar
    • 1/2 cup cold unsalted butter, cubed
    • 1/2 teaspoon cinnamon

For serving:

  • Caramel sauce for drizzling

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of the baking dish.
  3. Beat cream cheese and sugar until smooth, then mix in the eggs and vanilla. Spread evenly over the crust.
  4. Toss diced apples with brown sugar, cinnamon, and nutmeg, then layer over the cheesecake mixture.
  5. Prepare streusel by combining flour, brown sugar, cinnamon, and cold butter until crumbly. Sprinkle over the apples.
  6. Bake for 35–40 minutes or until the top is golden and cheesecake is set.
  7. Cool completely, then refrigerate for at least 2 hours.
  8. Slice into bars and drizzle with caramel before serving.

Notes

Use tart apples like Granny Smith for the best flavor and texture. For extra richness, swirl caramel into the cheesecake layer before baking. Bars store well in the refrigerator for up to 5 days and can be frozen for up to 3 months.
