Ingredients

  • 4 large eggs
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh mozzarella, diced
  • 2 tbsp olive oil
  • 2 tsp balsamic glaze
  • Fresh basil leaves, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease 4 small ramekins with olive oil.
  2. Place cherry tomatoes and mozzarella in each ramekin.
  3. Crack one egg over the tomatoes and cheese in each ramekin. Season with salt and pepper.
  4. Bake for 12–15 minutes until egg whites are set but yolks are still slightly runny.
  5. Drizzle with balsamic glaze and sprinkle with fresh basil before serving.
