- 4 large eggs
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh mozzarella, diced
- 2 tbsp olive oil
- 2 tsp balsamic glaze
- Fresh basil leaves, chopped
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F (190°C) and grease 4 small ramekins with olive oil.
- Place cherry tomatoes and mozzarella in each ramekin.
- Crack one egg over the tomatoes and cheese in each ramekin. Season with salt and pepper.
- Bake for 12–15 minutes until egg whites are set but yolks are still slightly runny.
- Drizzle with balsamic glaze and sprinkle with fresh basil before serving.
