  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and diced
  • 6 cups chicken or vegetable broth
  • 1/2 lb chouriço or kielbasa sausage, sliced thinly
  • 2 cups kale or collard greens, finely shredded
  • Salt and black pepper, to taste
  • Optional garnish: extra olive oil or crusty bread

  1. In a large pot, heat olive oil over medium heat. Sauté onion and garlic until soft, about 4–5 minutes.
  2. Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
  3. Use an immersion blender or potato masher to slightly mash the potatoes for a thicker texture.
  4. Add sliced chouriço and shredded kale. Simmer 5–7 minutes until kale is tender and sausage is heated through.
  5. Season with salt and black pepper to taste.
  6. Serve hot, drizzled with a little olive oil if desired, and with crusty bread on the side.

Notes

For authentic flavor, use Portuguese chouriço. Kale can be substituted with collard greens or spinach if needed.
