- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 medium potatoes, peeled and diced
- 6 cups chicken or vegetable broth
- 1/2 lb chouriço or kielbasa sausage, sliced thinly
- 2 cups kale or collard greens, finely shredded
- Salt and black pepper, to taste
- Optional garnish: extra olive oil or crusty bread

- In a large pot, heat olive oil over medium heat. Sauté onion and garlic until soft, about 4–5 minutes.
- Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
- Use an immersion blender or potato masher to slightly mash the potatoes for a thicker texture.
- Add sliced chouriço and shredded kale. Simmer 5–7 minutes until kale is tender and sausage is heated through.
- Season with salt and black pepper to taste.
- Serve hot, drizzled with a little olive oil if desired, and with crusty bread on the side.
Notes
For authentic flavor, use Portuguese chouriço. Kale can be substituted with collard greens or spinach if needed.
