  • 1 lb smoked sausage (like Andouille), sliced into rounds
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 1 bell pepper (any color), diced
  • 2 cloves garlic, minced
  • 1 cup long-grain rice, uncooked
  • 2 cups chicken broth
  • 1 tsp Cajun seasoning (adjust to taste)
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Optional garnish: chopped parsley or green onions

  1. Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook 3–4 minutes until lightly browned. Remove and set aside.
  2. Add diced onion and bell pepper to the skillet. Sauté 4–5 minutes until softened.
  3. Add garlic and cook 1 minute until fragrant.
  4. Stir in uncooked rice, Cajun seasoning, paprika, salt, and pepper, coating the rice in the spices.
  5. Add chicken broth and bring to a boil. Reduce heat to low, cover, and simmer 18–20 minutes until rice is tender and liquid is absorbed.
  6. Return cooked sausage to the skillet and stir to combine. Heat through.
  7. Garnish with parsley or green onions and serve warm.

Notes

You can add diced tomatoes, corn, or green beans for extra vegetables. Adjust Cajun seasoning for desired spice level.
