- 1 lb smoked sausage (like Andouille), sliced into rounds
- 1 tbsp olive oil
- 1 medium onion, diced
- 1 bell pepper (any color), diced
- 2 cloves garlic, minced
- 1 cup long-grain rice, uncooked
- 2 cups chicken broth
- 1 tsp Cajun seasoning (adjust to taste)
- 1/2 tsp paprika
- Salt and pepper, to taste
- Optional garnish: chopped parsley or green onions

- Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook 3–4 minutes until lightly browned. Remove and set aside.
- Add diced onion and bell pepper to the skillet. Sauté 4–5 minutes until softened.
- Add garlic and cook 1 minute until fragrant.
- Stir in uncooked rice, Cajun seasoning, paprika, salt, and pepper, coating the rice in the spices.
- Add chicken broth and bring to a boil. Reduce heat to low, cover, and simmer 18–20 minutes until rice is tender and liquid is absorbed.
- Return cooked sausage to the skillet and stir to combine. Heat through.
- Garnish with parsley or green onions and serve warm.
Notes
You can add diced tomatoes, corn, or green beans for extra vegetables. Adjust Cajun seasoning for desired spice level.
