- 1/2 tsp smoked paprika
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or half-and-half
- Salt and pepper, to taste

- Heat olive oil or butter in a large pot over medium heat. Add onion, garlic, celery, and carrot. Sauté 5 minutes until softened.
- Add diced potatoes, Cajun seasoning, smoked paprika, salt, and pepper. Stir to coat vegetables with spices.
- Pour in broth and bring to a boil. Reduce heat and simmer 20–25 minutes until potatoes are tender.
- Using an immersion blender, puree part of the soup for creaminess, leaving some potato chunks for texture. (Optional: transfer half to a blender and blend, then return to pot.)
- Stir in heavy cream and heat through. Adjust seasoning as needed.
- Serve hot, garnished with shredded cheddar, green onions, or bacon if desired.
Notes
For a vegetarian version, use vegetable broth and omit bacon. Adjust Cajun seasoning for desired spiciness.
