  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 tsp smoked paprika
  • 1 tsp Cajun seasoning (adjust to taste)
  • 1/2 tsp dried thyme
  • Salt and black pepper, to taste
  • Optional: cooked sausage or bacon for garnish
  • Optional garnish: green onions or parsley

  1. Heat butter and olive oil in a large pot over medium heat.
  2. Add onion and celery; cook 4–5 minutes until softened.
  3. Stir in garlic, Cajun seasoning, smoked paprika, and thyme; cook 30 seconds until fragrant.
  4. Add potatoes and chicken broth. Bring to a boil.
  5. Reduce heat and simmer 18–20 minutes until potatoes are fork-tender.
  6. Using an immersion blender, partially blend the soup for a creamy texture (or mash some potatoes by hand).
  7. Stir in heavy cream and simmer 5 minutes.
  8. Season with salt and black pepper. Serve hot with desired garnishes.

Notes

Adjust Cajun seasoning to control heat. For extra richness, add a little cream cheese or shredded cheddar before serving.
