- 1 small onion, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 tsp smoked paprika
- 1 tsp Cajun seasoning (adjust to taste)
- 1/2 tsp dried thyme
- Salt and black pepper, to taste
- Optional: cooked sausage or bacon for garnish

- Add onion and celery; cook 4–5 minutes until softened.
- Stir in garlic, Cajun seasoning, smoked paprika, and thyme; cook 30 seconds until fragrant.
- Add potatoes and chicken broth. Bring to a boil.
- Reduce heat and simmer 18–20 minutes until potatoes are fork-tender.
- Using an immersion blender, partially blend the soup for a creamy texture (or mash some potatoes by hand).
- Stir in heavy cream and simmer 5 minutes.
- Season with salt and black pepper. Serve hot with desired garnishes.
Notes
Adjust Cajun seasoning to control heat. For extra richness, add a little cream cheese or shredded cheddar before serving.
