Description

Ingredients

  • 1 medium head green cabbage, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 large onion, diced
  • 2 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and black pepper, to taste
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté for 2–3 minutes until fragrant.
  2. Add carrots, celery, and cabbage. Cook for 5–7 minutes, stirring occasionally.
  3. Pour in diced tomatoes and broth. Stir in thyme, basil, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
  5. Serve hot and enjoy this healthy, comforting soup.

Notes

For extra flavor, add a squeeze of lemon juice or a sprinkle of fresh parsley before serving.
