Ingredients

- 1 medium head green cabbage, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 large onion, diced
- 2 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable or chicken broth
- 1 tsp dried thyme
- 1 tsp dried basil
- Salt and black pepper, to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté for 2–3 minutes until fragrant.
- Add carrots, celery, and cabbage. Cook for 5–7 minutes, stirring occasionally.
- Pour in diced tomatoes and broth. Stir in thyme, basil, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 25–30 minutes until vegetables are tender.
- Serve hot and enjoy this healthy, comforting soup.
Notes
For extra flavor, add a squeeze of lemon juice or a sprinkle of fresh parsley before serving.
