- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1/2 head green cabbage, chopped
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable or chicken broth
- 1 tsp dried thyme or Italian seasoning
- Salt and black pepper, to taste
- Optional add-ins: green beans, potatoes, or cooked beans

- Heat olive oil in a large pot over medium heat. Sauté onion and garlic until fragrant, about 3–4 minutes.
- Add carrots and celery, cooking 3–4 minutes until slightly softened.
- Stir in chopped cabbage and cook 2–3 minutes until slightly wilted.
- Add diced tomatoes, broth, seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and simmer 20–25 minutes until vegetables are tender.
- Taste and adjust seasoning. Serve hot.
