- 1 medium onion, chopped

- 3 cups chopped cabbage

- 2 celery stalks, sliced
- 1 can (14.5 oz) diced tomatoes

- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper, to taste
- Optional: 1 cup cooked beans or shredded chicken for protein

- Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté 2–3 minutes until fragrant.
- Add carrots, celery, and cabbage. Cook for 5 minutes, stirring occasionally.
- Pour in diced tomatoes and broth. Stir in thyme, parsley, salt, and pepper.
- Bring to a boil, then reduce heat and simmer 20–25 minutes until vegetables are tender.
- Optional: Add cooked beans or shredded chicken and simmer 5 more minutes to heat through.
- Serve warm, garnished with fresh parsley if desired.
Notes
This soup is very versatile. You can add other vegetables like bell peppers, zucchini, or green beans. Freezes well for future meals.
