- Add dry ingredients: Whisk flour, baking powder, and salt. Gradually add to wet mixture and mix until just combined.
- Prepare crumble topping: In a small bowl, cut cold butter into flour and sugar until mixture resembles coarse crumbs.
- Assemble cookies: Scoop dough into balls, flatten slightly, and create a small well in the center. Fill each well with about 1 tsp raspberry jam.
- Sprinkle crumble topping over each cookie.
- Bake: Place cookies on a lined baking sheet and bake at 350°F (175°C) for 12–15 minutes until edges are lightly golden.
- Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack.
Notes
For a more rustic look, crumble topping can be slightly larger pieces. Any fruit jam can be substituted for raspberry. Use cold butter for a crispier crumble topping.
