  • 1 unbaked 9-inch pie crust
  • 1 cup packed brown sugar
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 3 cups whole milk
  • 4 large egg yolks, lightly beaten
  • 4 tbsp unsalted butter
  • 1 tsp vanilla extract
  • Whipped cream, for topping
  • Optional: butterscotch chips for garnish

  1. Preheat oven to 375°F (190°C). Blind bake the pie crust for 15 minutes or until lightly golden. Set aside to cool.
  2. In a medium saucepan, whisk together brown sugar, cornstarch, and salt.
  3. Gradually whisk in milk and cook over medium heat, stirring constantly, until mixture thickens and comes to a boil.
  4. Temper the egg yolks by slowly whisking in a small amount of the hot milk mixture, then return to saucepan. Cook 2–3 minutes until thickened.
  5. Remove from heat and stir in butter and vanilla extract until smooth.
  6. Pour filling into the baked pie crust and smooth the top.
  7. Chill in the refrigerator for at least 4 hours or until set.
  8. Top with whipped cream and optional butterscotch chips before serving.

Notes

For a deeper butterscotch flavor, melt 1/4 cup butterscotch chips into the hot filling before adding butter.
