- 1 unbaked 9-inch pie crust
- 1 cup packed brown sugar
- 1/4 cup cornstarch
- 1/4 tsp salt
- 3 cups whole milk
- 4 large egg yolks, lightly beaten
- 4 tbsp unsalted butter
- 1 tsp vanilla extract
- Whipped cream, for topping
- Optional: butterscotch chips for garnish

- Preheat oven to 375°F (190°C). Blind bake the pie crust for 15 minutes or until lightly golden. Set aside to cool.
- In a medium saucepan, whisk together brown sugar, cornstarch, and salt.
- Gradually whisk in milk and cook over medium heat, stirring constantly, until mixture thickens and comes to a boil.
- Temper the egg yolks by slowly whisking in a small amount of the hot milk mixture, then return to saucepan. Cook 2–3 minutes until thickened.
- Remove from heat and stir in butter and vanilla extract until smooth.
- Pour filling into the baked pie crust and smooth the top.
- Chill in the refrigerator for at least 4 hours or until set.
- Top with whipped cream and optional butterscotch chips before serving.
Notes
For a deeper butterscotch flavor, melt 1/4 cup butterscotch chips into the hot filling before adding butter.
