- 1 medium butternut squash, peeled, seeded, and cubed
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup coconut milk or heavy cream
- Fresh parsley or pumpkin seeds for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion and garlic until soft and fragrant.
- Add cubed butternut squash, vegetable broth, cinnamon, nutmeg, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 20–25 minutes, until squash is tender.
- Use an immersion blender to puree the soup until smooth. Stir in coconut milk or cream and heat through.
- Serve hot, garnished with parsley or pumpkin seeds.
Notes
For extra flavor, roast the squash before adding it to the soup. You can also adjust spices to your taste.
