  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup coconut milk or heavy cream
  • Fresh parsley or pumpkin seeds for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until soft and fragrant.
  2. Add cubed butternut squash, vegetable broth, cinnamon, nutmeg, salt, and pepper. Bring to a boil.
  3. Reduce heat, cover, and simmer for 20–25 minutes, until squash is tender.
  4. Use an immersion blender to puree the soup until smooth. Stir in coconut milk or cream and heat through.
  5. Serve hot, garnished with parsley or pumpkin seeds.
