  • 1 medium butternut squash, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 teaspoon fresh thyme leaves (optional)
  • Optional: grated Parmesan cheese for topping

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss butternut squash cubes with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
  3. Spread squash cubes in a single layer on the prepared baking sheet.
  4. Roast for 25–30 minutes, flipping halfway through, until tender and lightly browned.
  5. Optional: sprinkle with fresh thyme or grated Parmesan before serving.
  6. Serve warm as a side dish or appetizer.

Notes

You can add a drizzle of balsamic glaze for extra flavor. Leftovers can be stored in the fridge for up to 3 days and reheated.
