- 1 medium butternut squash, peeled and cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 teaspoon fresh thyme leaves (optional)
- Optional: grated Parmesan cheese for topping
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss butternut squash cubes with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
- Spread squash cubes in a single layer on the prepared baking sheet.
- Roast for 25–30 minutes, flipping halfway through, until tender and lightly browned.
- Optional: sprinkle with fresh thyme or grated Parmesan before serving.
- Serve warm as a side dish or appetizer.
Notes
You can add a drizzle of balsamic glaze for extra flavor. Leftovers can be stored in the fridge for up to 3 days and reheated.
