  • 1 cup cooked shredded chicken (rotisserie works well)
  • 4 cups chicken or vegetable broth
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Optional: 1 cup cooked pasta or rice
  • Optional garnish: fresh parsley or grated Parmesan

  4. Bring to a boil, then reduce heat and simmer 10–15 minutes until vegetables are tender.
  5. If using, stir in cooked pasta or rice and heat through.
