  • 2 lbs chicken wings, separated into drumettes and flats
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 tbsp vegetable oil
  • 1/2 cup hot sauce (like Frank’s RedHot)
  • 1/4 cup unsalted butter, melted
  • Optional: celery sticks and ranch or blue cheese dressing for serving

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
  2. Pat chicken wings dry with paper towels. Toss with salt, pepper, garlic powder, and vegetable oil.
  3. Arrange wings in a single layer on the wire rack and bake 40–45 minutes, flipping halfway, until crispy and cooked through.
  4. While wings bake, prepare buffalo sauce by whisking together hot sauce and melted butter in a small bowl.
  5. Remove wings from oven and place in a large bowl. Pour buffalo sauce over wings and toss to coat evenly.
  6. Serve immediately with celery sticks and ranch or blue cheese dressing.

Notes

For extra crispiness, broil the wings for 2–3 minutes at the end of baking. Adjust the spiciness of the sauce by adding more or less hot sauce or a pinch of cayenne pepper.
