- 2 cups fresh peaches, peeled and sliced
- 2 tablespoons brown sugar (for topping)
Instructions
- Preheat oven: Preheat to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- Cream butter and sugar: In a large bowl, beat butter and brown sugar until fluffy. Add eggs one at a time, then vanilla extract.
- Mix dry ingredients: In a separate bowl, whisk flour, baking powder, and salt.
- Combine wet and dry: Alternate adding dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
- Assemble the cake: Pour batter into prepared pan. Arrange peach slices on top. Sprinkle with 2 tablespoons brown sugar.
- Bake: Bake 40-45 minutes or until a toothpick inserted in the center comes out clean.
- Cool and serve: Let cool before slicing. Serve warm or at room temperature.
Notes
For best results, use ripe but firm peaches. You can substitute fresh peaches with frozen, just thaw and drain excess liquid before using.
