- Add egg, egg yolk, and vanilla extract. Mix until fully combined.
- In a separate bowl, whisk flour, baking powder, salt, and cinnamon.
- Fold dry ingredients into wet ingredients until just combined.
- Spread batter evenly into prepared pan.
- Mix cinnamon sugar topping and sprinkle evenly over the batter.
- Bake for 22–26 minutes, until edges are set and center is slightly soft.
- Cool completely before slicing into squares.
Notes
For extra chewiness, slightly underbake the blondies. Let them cool fully to set before cutting for clean slices.
