- 1 small onion, finely chopped
- 2 cloves garlic, minced

- 2 cups vegetable or chicken broth
- 2 cups whole milk or half-and-half
- 3 cups broccoli florets, chopped small
- 1 cup shredded carrots
- 2 cups shredded sharp cheddar cheese
- 1/4 tsp ground nutmeg (optional)
- Salt and black pepper, to taste
Instructions
- In a large pot, melt butter over medium heat. Add chopped onion and sauté for 4–5 minutes until soft.
- Stir in garlic and cook for 30 seconds. Sprinkle flour over onions and cook, stirring constantly, for 1–2 minutes to form a roux.
- Gradually whisk in broth and milk until smooth. Bring to a gentle simmer.
- Add chopped broccoli and shredded carrots. Simmer for 15–20 minutes, until vegetables are tender.
- Remove from heat and stir in cheddar cheese until melted. Season with salt, pepper, and nutmeg.
- For a smoother texture, partially blend the soup with an immersion blender or keep it chunky—your choice!
- Serve hot with crusty bread or in a bread bowl for extra comfort.
Notes
Use sharp cheddar for the best flavor, and avoid pre-shredded cheese—it melts smoother. Add a splash of cream at the end for extra richness if desired.
