- 1 medium onion, diced

- 1/4 cup all-purpose flour
- 2 cups chicken or vegetable broth
- 2 cups whole milk
- 1 cup heavy cream
- 4 cups fresh broccoli florets, chopped
- 1 large carrot, shredded
- 2 1/2 cups sharp cheddar cheese, shredded
- Salt and black pepper, to taste

- Melt butter in a large pot over medium heat. Add onion and cook 4–5 minutes until soft.
- Add garlic and cook 30 seconds until fragrant.
- Whisk in flour and cook 1 minute to remove raw flour taste.
- Gradually whisk in broth, milk, and cream until smooth.
- Add broccoli and shredded carrot. Bring to a gentle simmer.
- Cook 15–20 minutes until broccoli is tender.
- Reduce heat to low and stir in cheddar cheese until melted and smooth.
- Season with salt and black pepper to taste. Serve hot.
Notes
For a smoother soup, blend partially or fully using an immersion blender. Use freshly shredded cheese for best melting and flavor.
