  • 3 tbsp butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken or vegetable broth
  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 cups fresh broccoli florets, chopped
  • 1 large carrot, shredded
  • 2 1/2 cups sharp cheddar cheese, shredded
  • Salt and black pepper, to taste

  1. Melt butter in a large pot over medium heat. Add onion and cook 4–5 minutes until soft.
  2. Add garlic and cook 30 seconds until fragrant.
  3. Whisk in flour and cook 1 minute to remove raw flour taste.
  4. Gradually whisk in broth, milk, and cream until smooth.
  5. Add broccoli and shredded carrot. Bring to a gentle simmer.
  6. Cook 15–20 minutes until broccoli is tender.
  7. Reduce heat to low and stir in cheddar cheese until melted and smooth.
  8. Season with salt and black pepper to taste. Serve hot.

Notes

For a smoother soup, blend partially or fully using an immersion blender. Use freshly shredded cheese for best melting and flavor.
