- 2 tablespoons bourbon
- 3–4 ripe peaches, peeled and sliced
- 1/2 cup unsalted butter (for cake)
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup whole milk
Instructions
- Prepare the topping: In a small saucepan, melt 1/4 cup butter with brown sugar and bourbon. Stir until smooth. Pour into a greased 9-inch cake pan and arrange peach slices on top.
- Make the cake batter: In a large bowl, cream 1/2 cup butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then mix in vanilla.
- Mix dry ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Add to wet ingredients alternately with milk, mixing just until combined.
- Assemble and bake: Carefully spread the batter over the peaches. Bake at 350°F (175°C) for 35–40 minutes, or until a toothpick comes out clean.
- Cool and invert: Let the cake cool for 10 minutes, then run a knife around the edge and invert onto a serving plate.
Notes
Use fresh, ripe peaches for best flavor. If you don’t have bourbon, substitute with peach juice or skip entirely. Serve warm with vanilla ice cream for an indulgent treat.
