- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- For the Vanilla Custard Filling
- 1 cup milk
- 1/4 cup granulated sugar
- 2 tbsp cornstarch
- 2 large egg yolks
- 1 tsp vanilla extract
- 2 tbsp unsalted butter
- For the Chocolate Ganache
- 1/2 cup heavy cream
- 4 oz semisweet chocolate, chopped
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Make the Cookies: Cream butter and sugar until light and fluffy. Beat in eggs and vanilla. Gradually add flour, baking powder, and salt until a soft dough forms.
- Drop dough by tablespoonfuls onto baking sheets and bake 10–12 minutes until lightly golden. Cool completely.
- Make the Custard Filling: In a small saucepan, whisk together sugar, cornstarch, and egg yolks. Gradually whisk in milk. Cook over medium heat until thickened. Remove from heat, stir in butter and vanilla. Cool completely.
- Make the Chocolate Ganache: Heat cream until just boiling, pour over chopped chocolate. Stir until smooth. Cool slightly.
- Assemble Cookies: Spread a layer of custard on the bottom of one cookie and top with another cookie. Drizzle or dip the top with chocolate ganache.

For a firmer custard, chill before assembling. Use high-quality chocolate for the ganache. Store assembled cookies in the fridge for up to 3 days.
