  • 2 large eggs

  • 1/4 tsp salt
  • For the Vanilla Custard Filling
  • 1 cup milk
  • 1/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter
  • For the Chocolate Ganache
  • 1/2 cup heavy cream
  • 4 oz semisweet chocolate, chopped

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Make the Cookies: Cream butter and sugar until light and fluffy. Beat in eggs and vanilla. Gradually add flour, baking powder, and salt until a soft dough forms.
  3. Drop dough by tablespoonfuls onto baking sheets and bake 10–12 minutes until lightly golden. Cool completely.
  4. Make the Custard Filling: In a small saucepan, whisk together sugar, cornstarch, and egg yolks. Gradually whisk in milk. Cook over medium heat until thickened. Remove from heat, stir in butter and vanilla. Cool completely.
  5. Make the Chocolate Ganache: Heat cream until just boiling, pour over chopped chocolate. Stir until smooth. Cool slightly.
  6. Assemble Cookies: Spread a layer of custard on the bottom of one cookie and top with another cookie. Drizzle or dip the top with chocolate ganache.

Notes
