- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 carrots, diced
- 2 tsp ground cumin
- 1 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional)
- 2 cans (15 oz each) black beans, drained and rinsed
- 4 cups vegetable or chicken broth
- 1 can (14.5 oz) diced tomatoes
- Salt and black pepper, to taste
- Optional garnish: sour cream, chopped cilantro, lime wedges

- Heat olive oil in a large pot over medium heat. Sauté onion, garlic, red bell pepper, and carrots until softened, about 5–6 minutes.
- Add cumin, smoked paprika, and cayenne pepper (if using). Cook 1 minute until fragrant.
- Stir in black beans, broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer 20–25 minutes.
- Use an immersion blender to partially blend the soup for a thicker texture, leaving some beans whole for texture.
- Season with salt and black pepper to taste.
- Serve hot, garnished with sour cream, cilantro, and lime wedges if desired.
Notes
For extra flavor, sauté a diced jalapeño with the vegetables or add a splash of lime juice before serving. This soup freezes well.
