  • 1 lb breakfast sausage
  • 1 (16 oz) can refrigerated biscuits, cut into pieces
  • 3 tablespoons butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 6 large eggs
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cut biscuits into quarters and spread evenly in the baking dish.
  3. Cook sausage in a skillet over medium heat until browned. Remove sausage and set aside, leaving drippings in the skillet.
  4. Add butter to the skillet. Once melted, whisk in flour and cook for 1–2 minutes.
  5. Slowly pour in the milk while whisking to form a smooth gravy. Add salt, pepper, garlic powder, and onion powder. Simmer until thickened.
  6. Stir sausage into the gravy and pour evenly over the biscuits.
  7. In a bowl, whisk eggs and pour them evenly over the casserole.
  8. Top with cheddar cheese if desired.
  9. Bake for 40–45 minutes or until biscuits are golden and eggs are fully set.
  10. Let cool for 5 minutes before serving.

Notes

For extra flavor, add a pinch of crushed red pepper to the sausage gravy. This casserole can also be prepped ahead—assemble fully, refrigerate overnight, and bake in the morning.
