These Better Than Starbucks Egg Bites are ultra-creamy, protein-packed, and incredibly easy to make at home. Made with eggs, cottage cheese, and flavorful add-ins, they’re perfect for meal prep, breakfast, or a quick snack.

  • 8 large eggs
  • 1 cup cottage cheese (full-fat for best texture)
  • 1 cup shredded Gruyère or Monterey Jack cheese
  • 1/2 cup cooked bacon, chopped (or turkey bacon)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • Nonstick spray

  1. Preheat oven to 325°F (165°C). Grease a muffin tin generously.
  2. Add eggs and cottage cheese to a blender. Blend until completely smooth.
  3. Pour mixture into a bowl and stir in shredded cheese, bacon, salt, pepper, and garlic powder.
  4. Divide evenly into muffin cups, filling about 3/4 full.
  5. Place muffin tin inside a larger baking pan and add hot water halfway up the sides (water bath).
  6. Bake for 30–35 minutes until set but slightly jiggly in the center.
  7. Remove from oven, cool 5 minutes, then gently remove egg bites.

Notes

Store egg bites in the fridge for up to 5 days or freeze for up to 2 months. Reheat in the microwave for 30–45 seconds. Swap bacon for spinach, mushrooms, or roasted red peppers.
