- 4 cups low-sodium beef or chicken broth
- 2 medium potatoes, diced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried oregano
- 2 bay leaves
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a skillet over medium-high heat. Brown the beef (or chicken) for 2–3 minutes, then transfer to slow cooker.
- Add potatoes, carrots, celery, onion, garlic, and diced tomatoes to the slow cooker.
- Pour in broth, then stir in thyme, oregano, bay leaves, salt, and black pepper.
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until meat and vegetables are tender.
- Remove bay leaves, adjust seasoning as needed, and serve hot.
- Garnish with fresh parsley before serving.
