This Best Slow Cooker Broccoli Cheese Soup is creamy, cheesy, and full of comforting flavors. With tender broccoli and a velvety cheese base, it’s an easy family favorite you can make right in your crockpot.

- 4 cups fresh broccoli florets (about 2 heads), chopped
- 1 medium onion, diced
- 2 carrots, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth (or vegetable broth)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp mustard powder
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 3 cups sharp cheddar cheese, shredded
- 1/2 cup Parmesan cheese, grated
Instructions
- In a slow cooker, combine broccoli, onion, carrots, garlic, chicken broth, salt, pepper, paprika, and mustard powder. Stir well.
- Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours until vegetables are tender.
- In a saucepan, melt butter over medium heat. Whisk in flour to make a roux, cooking for 1–2 minutes. Gradually whisk in milk and cream until smooth and thickened.
- Stir the roux mixture into the slow cooker and mix well.
- Add cheddar and Parmesan cheeses, stirring until fully melted and incorporated.
- Adjust seasoning to taste and serve warm with bread or crackers.
Notes
For extra creaminess, blend part of the soup with an immersion blender before adding the cheese. You can also use pre-shredded cheese, but freshly grated melts smoother.
