  • 4 lbs Yukon gold or russet potatoes, peeled and cubed
  • 4 cloves garlic, roasted or minced
  • 1/2 cup unsalted butter
  • 1 cup whole milk or cream
  • 2 tsp fresh rosemary, finely chopped
  • Salt and black pepper, to taste
  • Optional: fresh parsley for garnish

Instructions

  1. Boil potatoes: Place potatoes in a large pot and cover with water. Add a pinch of salt and boil until tender, about 15–20 minutes. Drain well.
  2. Prepare garlic: If using roasted garlic, mash cloves; if raw, sauté lightly in butter until fragrant.
  3. Mash potatoes: Mash potatoes with butter, milk or cream, garlic, and rosemary until smooth and creamy.
  4. Season: Add salt and pepper to taste.
  5. Serve: Garnish with fresh parsley if desired and serve warm.

Notes

For extra richness, whip the potatoes with a hand mixer until fluffy. Roasting garlic ahead enhances the sweet, nutty flavor.
