- 4 lbs Yukon gold or russet potatoes, peeled and cubed
- 4 cloves garlic, roasted or minced
- 1/2 cup unsalted butter
- 1 cup whole milk or cream
- 2 tsp fresh rosemary, finely chopped
- Salt and black pepper, to taste
- Optional: fresh parsley for garnish
Instructions
- Boil potatoes: Place potatoes in a large pot and cover with water. Add a pinch of salt and boil until tender, about 15–20 minutes. Drain well.
- Prepare garlic: If using roasted garlic, mash cloves; if raw, sauté lightly in butter until fragrant.
- Mash potatoes: Mash potatoes with butter, milk or cream, garlic, and rosemary until smooth and creamy.
- Season: Add salt and pepper to taste.
- Serve: Garnish with fresh parsley if desired and serve warm.
Notes
For extra richness, whip the potatoes with a hand mixer until fluffy. Roasting garlic ahead enhances the sweet, nutty flavor.
