- 1 potato, diced
- 6 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion and garlic until fragrant and soft.
- Add carrots, celery, zucchini, green beans, broccoli, cauliflower, and potato. Cook for 5–7 minutes, stirring occasionally.
- Add diced tomatoes, vegetable broth, thyme, parsley, paprika, salt, and pepper.
