- 2 tbsp butter or olive oil
- 3 large leeks (white and light green parts), sliced and cleaned
- 2 cloves garlic, minced
- 3 medium potatoes, peeled and diced
- 4 cups vegetable or chicken broth
- 1/2 cup heavy cream (optional)
- 1/2 tsp salt, or to taste
- 1/4 tsp black pepper
- Fresh chives or parsley, for garnish

- Sauté leeks: In a large pot over medium heat, melt butter. Add sliced leeks and cook 5–7 minutes until soft but not browned. Stir in garlic and cook 1 minute more.
- Add potatoes and broth: Add diced potatoes and pour in broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
- Blend: Use an immersion blender to purée the soup until smooth. (Or blend in batches in a regular blender.)
- Finish: Stir in heavy cream if using. Season with salt and pepper to taste. Heat gently without boiling.
- Serve: Ladle into bowls and garnish with fresh chives or parsley.
Notes
For a lighter version, omit the cream. For extra depth of flavor, add a bay leaf while simmering and remove before blending. This soup can also be served chilled (Vichyssoise-style).
