  • 2 tbsp butter or olive oil
  • 3 large leeks (white and light green parts), sliced and cleaned
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream (optional)
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper
  • Fresh chives or parsley, for garnish

  1. Sauté leeks: In a large pot over medium heat, melt butter. Add sliced leeks and cook 5–7 minutes until soft but not browned. Stir in garlic and cook 1 minute more.
  2. Add potatoes and broth: Add diced potatoes and pour in broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
  3. Blend: Use an immersion blender to purée the soup until smooth. (Or blend in batches in a regular blender.)
  4. Finish: Stir in heavy cream if using. Season with salt and pepper to taste. Heat gently without boiling.
  5. Serve: Ladle into bowls and garnish with fresh chives or parsley.

Notes

For a lighter version, omit the cream. For extra depth of flavor, add a bay leaf while simmering and remove before blending. This soup can also be served chilled (Vichyssoise-style).
