  • 3 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1 1/2 tsp salt (or to taste)
  • 8 cups vegetable broth
  • 2 cups chopped greens (spinach, kale, or chard)
  • 2 tbsp olive oil
  • Juice of 1 lemon (optional, for brightness)

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onion, carrots, celery, and garlic for 3–4 minutes until softened.
  2. Add potatoes, lentils, cumin, paprika, salt, pepper, and vegetable broth. Bring to a boil, then reduce heat and simmer, covered, for 35–40 minutes, until lentils and potatoes are tender.
  3. Stir in chopped greens and cook for another 5 minutes until wilted.
  4. Adjust seasoning as needed and add lemon juice if desired. Serve hot.
