- 1 1/2 cups dried lentils, rinsed
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp black pepper
- 1 1/2 tsp salt (or to taste)
- 8 cups vegetable broth
- 2 cups chopped greens (spinach, kale, or chard)
- 2 tbsp olive oil
- Juice of 1 lemon (optional, for brightness)
Instructions
- In a large pot, heat olive oil over medium heat. Sauté onion, carrots, celery, and garlic for 3–4 minutes until softened.
- Add potatoes, lentils, cumin, paprika, salt, pepper, and vegetable broth. Bring to a boil, then reduce heat and simmer, covered, for 35–40 minutes, until lentils and potatoes are tender.
- Stir in chopped greens and cook for another 5 minutes until wilted.
- Adjust seasoning as needed and add lemon juice if desired. Serve hot.
Notes
This lentil soup is vegan, gluten-free, and perfect for meal prep. Leftovers keep well in the fridge for 4 days or can be frozen for up to 3 months.
