  • 1 1/2 lbs (700g) beef chuck or stewing beef, cubed
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil or butter
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 cup beef broth
  • 1 cup Guinness or dark stout (optional)
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • 1 bay leaf
  • 1 sheet puff pastry or shortcrust pastry
  • 1 egg, beaten (for egg wash)

  1. Preheat oven to 375°F (190°C).
  2. Toss beef with flour, salt, and black pepper.
  3. Heat oil in a large pan over medium-high heat. Brown the beef in batches and set aside.
  4. In the same pan, sauté onion and carrots until softened, about 5 minutes.
  5. Add garlic and tomato paste; cook for 1 minute.
  6. Return beef to the pan. Pour in beef broth and Guinness (if using).
  7. Add thyme and bay leaf. Simmer gently for 25–30 minutes until beef is tender and gravy thickens.
  8. Remove bay leaf and transfer filling to a pie dish.
  9. Top with pastry, seal edges, cut a small slit for steam, and brush with egg wash.
  10. Bake for 30–35 minutes until pastry is golden brown.
  11. Rest 10 minutes before serving.

Notes

For deeper flavor, make the filling a day ahead and refrigerate overnight. Serve with mashed potatoes or buttered peas for a traditional Irish meal.
