- 1 1/2 lbs (700g) beef chuck or stewing beef, cubed
- 2 tbsp all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp vegetable oil or butter
- 1 large onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 1 tbsp tomato paste
- 1 cup beef broth
- 1 cup Guinness or dark stout (optional)
- 1 tsp fresh thyme (or 1/2 tsp dried)
- 1 bay leaf
- 1 sheet puff pastry or shortcrust pastry
- 1 egg, beaten (for egg wash)

- Preheat oven to 375°F (190°C).
- Toss beef with flour, salt, and black pepper.
- Heat oil in a large pan over medium-high heat. Brown the beef in batches and set aside.
- In the same pan, sauté onion and carrots until softened, about 5 minutes.
- Add garlic and tomato paste; cook for 1 minute.
- Return beef to the pan. Pour in beef broth and Guinness (if using).
- Add thyme and bay leaf. Simmer gently for 25–30 minutes until beef is tender and gravy thickens.
- Remove bay leaf and transfer filling to a pie dish.
- Top with pastry, seal edges, cut a small slit for steam, and brush with egg wash.
- Bake for 30–35 minutes until pastry is golden brown.
- Rest 10 minutes before serving.
Notes
For deeper flavor, make the filling a day ahead and refrigerate overnight. Serve with mashed potatoes or buttered peas for a traditional Irish meal.
