- 1 lb ground beef or Italian sausage
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 4 cups chicken or beef broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
- 8 oz uncooked lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese per serving (optional)
- 1/2 cup shredded mozzarella cheese per serving
- Fresh basil for garnish
Instructions
- In a large pot, brown ground beef over medium heat. Drain excess fat.
- Add onion and garlic; sauté until softened, about 3–4 minutes.
- Stir in crushed tomatoes, broth, basil, oregano, red pepper flakes, salt, and pepper.
- Bring soup to a boil, then reduce to a simmer.
- Add broken lasagna noodles and cook 10–12 minutes until tender, stirring occasionally.
- Ladle soup into bowls and top with a spoonful of ricotta and shredded mozzarella.
- Garnish with fresh basil and serve warm.
