- 1 lb cremini or white mushrooms, sliced
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 1/2 tsp dried thyme
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Sauté vegetables: In a large pot, melt butter over medium heat. Add onions and garlic; cook until translucent.
- Add mushrooms: Stir in sliced mushrooms and thyme; cook until mushrooms release moisture and soften, about 8–10 minutes.
- Make roux: Sprinkle flour over mushrooms and stir for 2 minutes to cook the flour.
- Add broth: Slowly whisk in broth, stirring constantly to prevent lumps. Bring to a simmer and cook until slightly thickened, about 10 minutes.
- Blend (optional): For a smoother texture, use an immersion blender to puree part or all of the soup.
- Add cream: Stir in heavy cream and heat through, but do not boil. Season with salt and pepper to taste.
- Serve: Garnish with fresh parsley if desired, and enjoy warm.
Notes
Use a mix of wild mushrooms for deeper flavor. For a dairy-free version, substitute coconut milk for cream and olive oil for butter.
