- 500 g (1 lb) fresh mushrooms, sliced (cremini, button, or mixed)
- 2 tbsp butter
- 1 tbsp olive oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
- 3 tbsp all-purpose flour
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat butter and olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add garlic, thyme, and mushrooms. Cook until mushrooms release liquid and turn golden, about 8–10 minutes.
- Sprinkle in flour, stirring well to coat the mushrooms. Cook for 2 minutes to eliminate raw flour taste.
- Slowly whisk in the broth, ensuring no lumps form. Bring to a gentle simmer and cook for 10 minutes.
- Reduce heat, stir in the heavy cream, and season with salt and pepper. Simmer for another 5 minutes until creamy and flavorful.
- Serve hot, garnished with fresh parsley and crusty bread.
Notes
For extra depth of flavor, deglaze the mushrooms with a splash of white wine before adding the broth. For a smooth soup, blend with an immersion blender.
