- ½ cup vegetable oil
- 1 cup canned pumpkin puree
- 2 large eggs
- 1 cup light brown sugar, packed
- 1 tsp vanilla extract
- ¾ cup semi-sweet chocolate chips
- Optional: extra chocolate chips for topping
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, and spices.
- In a large bowl, whisk oil, pumpkin puree, eggs, brown sugar, and vanilla until smooth.
- Stir dry ingredients into wet until just combined. Fold in chocolate chips.
- Pour batter into loaf pan and sprinkle extra chips on top if desired.
- Bake 55–65 minutes or until a toothpick inserted in the center comes out clean.
- Let cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
