- 1 lb breakfast sausage, cooked and crumbled
- 1 (30 oz) bag frozen hash browns, thawed
- 8 large eggs
- 1 1/2 cups milk
- 2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 2 tbsp chopped green onions or parsley (optional)
- Butter or cooking spray for greasing

- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Spread hash browns evenly in the bottom of the baking dish.
- Sprinkle cooked sausage evenly over the hash browns.
- Top with shredded cheddar and mozzarella cheese.
- In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder.
- Pour egg mixture evenly over the casserole.
- Cover with foil and bake for 35 minutes.
- Remove foil and bake an additional 15–20 minutes until eggs are set and top is golden.
- Let rest 5 minutes. Garnish with green onions or parsley before serving.
Notes
This casserole can be made the night before and baked in the morning. Swap sausage for bacon or ham, or add bell peppers for extra flavor.
