  • 1 lb (450g) ground beef
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cans (15 oz each) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt and black pepper, to taste
  • Optional garnishes: shredded cheese, sour cream, chopped cilantro

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Brown the ground beef, breaking it into small pieces. Drain excess fat.
  2. Add onion, garlic, and bell peppers. Sauté until softened, about 5–6 minutes.
  3. Stir in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Cook 1–2 minutes to release the spices’ aroma.
  4. Add diced tomatoes and beans. Bring to a boil, then reduce heat and simmer for 30–35 minutes, stirring occasionally.
  5. Adjust seasoning to taste. Serve hot with optional garnishes.

Notes

For deeper flavor, simmer longer or add a splash of beer. You can also mix in corn or chopped jalapeños for added texture and spice.
