- 1 lb (450g) ground beef
- 1 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cans (15 oz each) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (optional)
- Salt and black pepper, to taste
- Optional garnishes: shredded cheese, sour cream, chopped cilantro
Instructions
- Heat olive oil in a large pot over medium-high heat. Brown the ground beef, breaking it into small pieces. Drain excess fat.
- Add onion, garlic, and bell peppers. Sauté until softened, about 5–6 minutes.
- Stir in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Cook 1–2 minutes to release the spices’ aroma.
- Add diced tomatoes and beans. Bring to a boil, then reduce heat and simmer for 30–35 minutes, stirring occasionally.
- Adjust seasoning to taste. Serve hot with optional garnishes.
Notes
For deeper flavor, simmer longer or add a splash of beer. You can also mix in corn or chopped jalapeños for added texture and spice.
