- 1 block (7 oz) feta cheese
- 2 cups cherry tomatoes
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- Salt and black pepper, to taste
- 8 oz orzo pasta
- 1/4 cup fresh basil, chopped
- 1/4 cup grated Parmesan cheese (optional)

- Preheat oven to 400°F (200°C).
- In a baking dish, combine cherry tomatoes, garlic, olive oil, oregano, salt, and pepper. Place feta block in the center.
- Bake for 25–30 minutes until tomatoes are soft and feta is golden and creamy.
- Meanwhile, cook orzo according to package instructions. Drain and set aside.
- Remove baked feta and tomatoes from oven. Mash feta and stir it together with the roasted tomatoes to create a creamy sauce.
- Combine the sauce with cooked orzo and mix well.
- Garnish with fresh basil and Parmesan cheese, if desired. Serve warm.
Notes
For extra flavor, add a pinch of red pepper flakes while baking. You can also use whole wheat orzo for a healthier twist.
