- 12 oz (340g) cherry tomatoes
- 1 block (7 oz) feta cheese
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp dried oregano
- Salt and black pepper to taste
- 8 oz (225g) orzo pasta
- 2 tbsp fresh basil, chopped
- Optional: red pepper flakes for heat

- Preheat oven: Preheat oven to 400°F / 200°C.
- In a baking dish, place cherry tomatoes and block of feta. Drizzle with olive oil, sprinkle garlic, oregano, salt, and pepper.
- Bake 25–30 minutes until tomatoes burst and feta is soft.
- Meanwhile, cook orzo according to package instructions; drain.
- Remove baking dish from oven and mash feta and tomatoes together until creamy.
- Add cooked orzo to the dish and stir to combine. Adjust seasoning.
- Garnish with fresh basil and optional red pepper flakes before serving.
Notes
Serve as a main or side dish. Add cooked chicken or shrimp for extra protein. Leftovers store well in the fridge for up to 3 days.
