  • 2 lbs beef stew meat, cut into 1-inch cubes
  • 4 cups beef broth
  • 4 medium potatoes, peeled and diced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and pepper, to taste
  • 2 tbsp all-purpose flour (optional, for thickening)
  • 2 tbsp water (optional, for thickening)

  1. Place beef stew meat in the crock pot.
  2. Add chopped potatoes, carrots, celery, onion, and garlic.
  3. Stir in beef broth, tomato paste, thyme, rosemary, bay leaves, salt, and pepper.
  4. Cover and cook on low for 7–8 hours or on high for 4–5 hours, until beef and vegetables are tender.
  5. Optional: To thicken stew, mix flour and water to form a slurry and stir into stew. Cook an additional 15–20 minutes until thickened.
  6. Remove bay leaves before serving. Serve hot with crusty bread or over rice if desired.

Notes

For richer flavor, sear beef cubes in a skillet before adding to the crock pot. You can also add peas or green beans in the last 30 minutes of cooking.
