- 2 lbs beef stew meat, cut into 1-inch cubes
- 4 cups beef broth
- 4 medium potatoes, peeled and diced
- 3 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- Salt and pepper, to taste
- 2 tbsp all-purpose flour (optional, for thickening)
- 2 tbsp water (optional, for thickening)

- Place beef stew meat in the crock pot.
- Add chopped potatoes, carrots, celery, onion, and garlic.
- Stir in beef broth, tomato paste, thyme, rosemary, bay leaves, salt, and pepper.
- Cover and cook on low for 7–8 hours or on high for 4–5 hours, until beef and vegetables are tender.
- Optional: To thicken stew, mix flour and water to form a slurry and stir into stew. Cook an additional 15–20 minutes until thickened.
- Remove bay leaves before serving. Serve hot with crusty bread or over rice if desired.
Notes
For richer flavor, sear beef cubes in a skillet before adding to the crock pot. You can also add peas or green beans in the last 30 minutes of cooking.
