Description

This Slow-Braised Beef Roast with Cranberry Balsamic Glaze is tender, deeply flavorful, and perfect for cozy dinners or special occasions. The beef slowly cooks until fall-apart tender, then finishes with a tangy-sweet cranberry balsamic glaze that adds a festive, elegant touch.

Ingredients

Scale

Ingredients

  • 34 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup fresh or frozen cranberries
  • 1/4 cup balsamic vinegar
  • 2 tbsp brown sugar or honey
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • Fresh rosemary or thyme, for garnish

Instructions

Instructions

  1. Preheat oven: Preheat oven to 325°F (165°C).
  2. Season beef: Pat the beef roast dry and season all sides with salt, pepper, garlic powder, and dried thyme.
  3. Sear: Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until deeply browned. Remove and set aside.
  4. Aromatics: Add sliced onion to the pot and cook until softened, about 5 minutes. Add garlic and cook 30 seconds.
  5. Deglaze: Stir in tomato paste, then add beef broth, cranberries, balsamic vinegar, brown sugar, and Worcestershire sauce. Bring to a gentle simmer.
  6. Braise: Return beef to the pot, cover, and transfer to the oven. Braise for 3–3.5 hours, until the beef is fork-tender.
  7. Glaze: Remove beef and tent with foil. Simmer the sauce on the stovetop for 10–15 minutes until thickened and glossy.
  8. Serve: Slice or shred beef and spoon cranberry balsamic glaze over the top. Garnish with fresh herbs.

Notes

Serve with mashed potatoes, roasted vegetables, or buttered noodles. For deeper flavor, make this a day ahead and reheat gently. Leftovers keep well refrigerated for up to 4 days.
