  • 2 tbsp olive oil
  • 1.5 lb beef chuck or stew meat, cut into cubes
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup dry red wine (optional)
  • 1 can (14 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 3 cups beef broth
  • 1 cup orzo pasta
  • 1 tsp dried oregano
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground allspice
  • Salt and black pepper, to taste
  • Grated Kefalotyri or Parmesan cheese, for serving

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add beef and brown on all sides. Remove and set aside.
  3. In the same pot, sauté onion until soft, then add garlic and cook 30 seconds.
  4. Deglaze with red wine, scraping up any browned bits.
  5. Stir in crushed tomatoes, tomato paste, beef broth, oregano, cinnamon, and allspice.
  6. Return beef to the pot, season with salt and pepper, cover, and simmer 45–60 minutes until tender.
  7. Stir in orzo and cook uncovered for 10–12 minutes, stirring occasionally, until pasta is tender.
  8. Remove from heat and rest 5 minutes before serving.
  9. Serve hot topped with grated cheese.

Notes

Giouvetsi thickens as it rests—add a splash of broth if needed. Traditionally baked in the oven, but this stovetop version is just as delicious.
