- 2 tbsp olive oil
- 1.5 lb beef chuck or stew meat, cut into cubes
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup dry red wine (optional)
- 1 can (14 oz) crushed tomatoes
- 2 tbsp tomato paste
- 3 cups beef broth
- 1 cup orzo pasta
- 1 tsp dried oregano
- 1/2 tsp ground cinnamon
- 1/4 tsp ground allspice
- Salt and black pepper, to taste
- Grated Kefalotyri or Parmesan cheese, for serving

- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add beef and brown on all sides. Remove and set aside.
- In the same pot, sauté onion until soft, then add garlic and cook 30 seconds.
- Deglaze with red wine, scraping up any browned bits.
- Stir in crushed tomatoes, tomato paste, beef broth, oregano, cinnamon, and allspice.
- Return beef to the pot, season with salt and pepper, cover, and simmer 45–60 minutes until tender.
- Stir in orzo and cook uncovered for 10–12 minutes, stirring occasionally, until pasta is tender.
- Remove from heat and rest 5 minutes before serving.
- Serve hot topped with grated cheese.
Notes
Giouvetsi thickens as it rests—add a splash of broth if needed. Traditionally baked in the oven, but this stovetop version is just as delicious.
